sick tuesday

so just as i thought i was kicking this cold out for good, i woke up at four this morning feeling like my head weighed about 30 pounds. (and thanks to jerry maguire i know the average human head weighs 8 pounds… not 30) so after a handful of advil and a hot bubble bath, i decided sleeping it off would be best and my wonderful coworker picked up my shift for me today. what a trooper… on a gorgeous sunny blue sky spring day. 

anyway, in honor of being sick, here is one of my favorite feel better soups and even better, a quick version by cooking light. they seriously have the best recipes. no joke. so if anyone else out there is going through the whole “spring cold/flu”, try this:

quick chicken noodle soup 

ingredients


2 cups water

1 32oz carton fat-free low sodium chicken broth

1 tablespoon olive oil

1/2 cup chopped onion

1/2 cup chopped celery

1/2 teaspoon salt

1/2 teaspoon fresh ground black pepper

1 medium carrot chopped

6 oz fusilli pasta

2 1/2 cups shredded or diced skinless boneless rotisserie chicken breast

2 teaspoons chopped fresh flat-leaf parsley

prep


combine 2 cups of water and chicken broth in a microwave-safe dish and microwave on high for 5 minutes.

while broth mixture heats, heat a large saucepan over medium-high heat. add oil to pan; swirl to coat. add onion, celery, salt, pepper, and carrot. saute 3 minutes or until almost tender, stirring frequently. add hot broth to the mixture and pasta. bring to a boil. cook 7 minutes or until pasta is almost al dente. stir in chicken; cook one minute or until heated thoroughly. stir in parsley. 

and don’t overcook the pasta like i did. ugh. anyway… back to napping and drinking plenty of liquids. say hello to the sunshine for me.
