so super bowl xlviii is this sunday and everyone in my house is still sticking to their new years resolution diets eeek! which means no chicken wings, sloppy joes, pizza, nachos, or any of the other delicious super bowl foods. so i did a little shopping around and picked out a couple recipes to bring to the table. GO SEAHAWKS!
1. mini cauliflower pizza bites : i first found out about cauliflower crust from my future sister-in-law, courtney, when she was staying with us this past fall. courtney is gluten-free and we wanted to try a recipe for garlic bread made with cauliflower dough. it was phenomenal. customize these mini cauliflower pizza bites with your favorite toppings. i am thinking ham and mushroom for sure!
2. feta stuffed mushrooms : i originally picked these out because i know how much my dad loves stuffed mushrooms. but when i saw it was only 58 calories for 4 of them, it sealed the deal! delicious, quick, and easy to make, looking forward to these!
3. spicy chipotle white bean dip : this dip caught my eye because i love spicy and i love chips and dip. this recipe uses chipotle peppers in adobo sauce so it should have a nice kick to it!
